One of our favorite stops on our Civil Rights trip is in the heart of the Mississippi Delta where we spend the day in Baptist Town and Greenwood with Sylvester and Mary Hoover. Sylvester is our local guide and expert in a town that became the ground-zero for the civil rights movement with the murder of Emmett Till and home to blues legend, Robert Johnson. His wife, Mary Hoover is a local cook who brought her expertise in southern cooking to the set of The Help which was filmed in Greenwood. Ever since we have been stuck at home doing our part to flatten the curve, we have been dreaming of Mary’s famous ribs. Since we all have some extra time on our hands we wanted to share with you Mary’s recipe to try out at home! Click the video below for a cooking demonstration by Mary Hoover.
Mary Hoover’s Famous Rib Rub
Recipe Ingredients:
Pork Ribs
Butter
Mary Hoover’s Famous Rub
Directions:
Begin by washing the ribs and patting them dry
Next, rub the ribs generously with butter on both sides
Cover and refrigerate for 20 minutes.
Remove from the refrigerator and generously season ribs with MARY’S FAMOUS RUB
Rub it into the ribs on all sides
Place the ribs on a hot grill and let cook for one hour on each side
Remove from grill and let rest for 10-25 minutes

Rendezvous’ Famous Dry Rub Recipe

Servings: About two cups, enough for about 12 pounds of ribs. Dry rub will keep for months in an air-tight jar or container.
